Hola!!
Hoy vuelvo con otra receta. Esta vez de pasta integral,
buenísima! La verdad es que las fotos no le hacen justicia, es una pena.
Teníamos invitados a comer y no pude entretenerme mucho haciendo las fotos.
Pero este es uno de mis platos de pasta favoritos! Tengo que reconocer que es un invento de mi
chico y gracias a él la comemos mucho en casa. Como siempre, es una receta muy
sencilla y saludable.
Muchas personas se asustan al incorporar pasta en la dieta
porque piensan que van a engordar, pero esto me parece un grave error. Como
siempre digo en mi blog, recomiendo comer pastas integrales, que carecen de
colesterol y triglicéridos (importante cómo la cocinemos), contienen fibra (lo
que ayuda a mejorar el tránsito intestinal), su glucosa es de absorción lenta
(no se producen ascensos bruscos de la glucemia. Al mantener un nivel constante
de glucosa en sangre, se prolonga la sensación de saciedad en el tiempo),
contienen vitaminas y minerales… todas estas propiedades me sobran para
convencerme de que la pasta integral es un buen alimento. Aporta calorías, sí, pero
las calorías son necesarias para la vida! Son la energía que necesita nuestro
cuerpo para desarrollar todas sus funciones. Siempre y cuando lo hagamos con
cabeza y no nos comamos medio kilo de pasta, no tenemos por qué engordar. Las
cantidades obviamente dependerán de tus requerimientos nutricionales, en base a factores personales y a la actividad física que realices. Por tanto,
TODOS podemos comer pasta integral acompañada de ingredientes saludables SIEMRE
que queramos, controlando obviamente la cantidad ingerida.
Las fotos de esta receta están hechas con pasta de trigo integral, pero
hay muchas modalidades a elegir aparte
del trigo: de espelta, de arroz integral*, de trigo sarraceno (alforfón)*, de
quinoa*… (*sin gluten).
Te animo a que las vayas probando y a que pierdas el miedo a
comer pasta!
Pasta integral con pesto de almendras y tomates cherry
Ingredientes (4 raciones)
- 500 gr de pasta integral
- 16 gr de albahaca
- 500 gr de tomates cherry
- Queso parmesano vegano, opcional (cantidad a tu gusto) - Tengo pendiente subir receta de este queso, es muy sencillo, sólo se necesitan anacardos, levadura, sal marina y ajo en polvo, estará pronto en el blog!
- 1 diente de ajo
- 120 gr de almendras
- Aceite de oliva
Receta
En un procesador de alimentos tritura primero las almendras.
A continuación, añade el ajo y la albahaca y continúa triturando hasta que los ingredientes queden bien picados. Añade el queso de anacardos (si lo tienes) y remueve bien. Lava y corta los
tomates cherry en cuatro trozos cada uno y añádelos a la mezcla anterior. Añade
sal marina, revuélvelo todo bien y reserva.
Cuece la pasta según instrucciones del fabricante. Una vez
tengas la pasta cocida y colada, añade todos los ingredientes y mezcla muy bien. Se puede
añadir al final un chorrito de aceite de oliva, pero si quieres evitar añadir
grasas al plato no es necesario, queda muy bueno igualmente.

return with a new recipe. This time is a wholegrain pasta recipe. This tastes
even better than it looks in the photos, I promise! It´s a pity, but we had
host lunch guests and I couldn´t spend so much time taking photos. But this is
one of my favourite pasta dishes! I must confess that this recipe is an
invention of my boyfriend, and because of him we eat it a lot of times. As
always, is a very easy and healthy recipe.
Many people
are afraid of including pasta in their diets because they think that they are
going to get fat. But this idea, in my opinion, is a serious mistake. As I
always say on the blog, I recommend eating whole grain pasta, which is fat and triglyceride
free (it´s important the way of cooking it), it contains fiber (helping to regulate
the digestion), provides slow-release form of glucose (no increases in blood
sugar are produced. To maintain a constant glucose level, will keep you
feeling full longer), it provides minerals and vitamins… All such properties
are enough to convince me that wholegrain pasta is a great food. It contains
calories, but calories are necessary for life! They are the energy that our
body needs to develop all the functions. Provided that we don´t eat a kilo of
pasta, we should not necessarily gain weight. Amounts depend on your nutritional
needs on the basis of personal factors and physical activity you do. Therefore,
we can ALL eat wholegrain pasta accompanied by healthy ingredients whenever we
want, controlling the amount.
This time
we used whole wheat pasta, but there are a lot of options to choose from: wholegrain
spelt, brown rice*, buckwheat*, quinoa*… (*gluten free).

you to try them and take away the fear of eating pasta!
Wholegrain
pasta with almond pesto and cherry tomatoes
Ingredients
(4 servings)
- 500 g wholegrain pasta
- 16 g basil
- 1 garlic clove
- Vegan parmesan cheese – Optional (amount suit to your personal taste) – I will share vegan parmesan cheese recipe, is very easy! You will only need cashew, yeast, garlic and sea salt. I´ll share the recipe soon, I promise!
- 500 g cherry tomatoes
- 120 g almond
- Olive oil
Recipe
Firstly,
crush the almonds with a food processor. Add the garlic and the basil and
continue crushing. Wash and cut in four parts each cherry tomato and add them
to the previous mix. Add the parmesan vegan cheese (if you want), sea salt, and
reserve.
Cook pasta
according to package directions, drain and add to the mixture. Stir well and
add a dash of olive oil (if you want to avoid eating fats, you can omit
this step, it will be tasty as well).
Who said
that we have to give up on eating a delicious wholegrain pasta dish???
