What would
I do without chickpeas? Better still, what would I do without falafel?
For those
who might not be aware, falafel is a blend of chickpeas and species in the form
of balls or mini-burgers. The original recipe was said to have been fried, but I´ve
chosen the baked version, which is healthier and yummy! My boyfriend says that
this kind of recipe is why he wouldn´t mind to become a vegan!
Before
doing it for the first time, I thought that it was a cumbersome recipe, but
nothing could be more untrue! If you continue reading, you will see that it´s
so easy.
Ingredients
- 200 gr of raw chickpeas soaked overnight (at least 10-12 hours) and drained (don´t use cooked chickpeas!)
- 1 spring onion
- 1 handful of fresh parsley
- 2 garlic cloves
- Species: cumin, sea salt and ground black pepper (some people add cinnamon and coriander. But I don´t like coriander and my boyfriend doesn´t like cinnamon!)
- 1 tbsp olive oil
Recipe
When the
chickpeas are drained, pour them in a food processor with the remaining
ingredients and mix well until you obtain a homogeneous paste.
Preheat the
oven to 392 degrees Fahrenheit. Cover a tray with baking parchment and form
balls of the mixture and give them the desired shape (I like mini-burger
shape). To make them crispy, you can paint them with a bit of olive oil
(optional).
Bake for 15
minutes. After that time, remove the falafel from the oven and flip each one.
Return the tray to the oven for another 13 minutes, until the falafel are
lightly browned on both sides (depending on the oven).
I love
eating falafel with tahini or artichokes hummus (it will be the next recipe on the
blog, I will notify you by Instagram when I post it).
I strongly
advise you to try this recipe, it´s soooooo yummy!! I promise!
Yummy! Yummy!
