Quinoa a la Cubana / Cuban Style Quinoa

(Find ENGLISH version bellow)

Hola!!!

Hi!

Today, more than a recipe, I bring a dish idea.

The star ingredient is: QUINOA (of course..! hehe).

Healthy recipe of “Cuban-Style Quinoa”: It´s so easy, healthy and, the most important, it´s yummy!! It´s a pleasure when the yolk of the egg is spread over the other ingredients...

Ingredients
  • Cooked Quinoa (How to cook quinoa here)
  • Tomato sauce
  • Banana
  • Ecologic eggs
  • White vinegar
  • Sea salt
  • Olive oil

Recipe

Peel the banana and cut into slices. Cook the banana in a frying pan with a scrap of olive oil until light golden brown.

Next step is to poach the eggs: I place them in a plate so that is easier to pour them in the pan (I never pour them directly in the pan). Bring water to boil into a pan with a tsp of white vinegar. As it comes to the boil, lower the heat to simmer and with a spoon remove water to create a whirl. When the water stops boiling and while it continues turning, pour the egg and leave to cook for around 3 minutes. Remove the egg from water and drain well. Finished!

Once all the ingredients are ready, serve them on a plate sided by tomato sauce and enjoy it!

I love this recipe because I love quinoa, grilled bananas and poached eggs!
